A combination of game meats slowly cooked with chestnut mushrooms, smoked bacon and redcurrants, 
served with red cabbage braised in mulled wine, mashed potato and a puff pastry pie lid

Pan-seared calves liver, cooked pink and accompanied with Lyonnaise potatoes, 
Parma ham crisp, green beans and a port & Stilton jus
